The Cookbook at a Glance

I have a habit with cookbooks of jumping to the recipe featured on the front. Doing this happens especially when it looks as delicious as the Red Velvet Quick Bread featured on the cover of Sharon Lachendro’s book The Gluten-Free Quick Breads Cookbook: 75 Easy Homemade Loaves in Half the Time.

When you go to the recipe for Red Velvet Quick Bread on page 68 of the print edition, particularly if you’re addicted to all red velvet treats, you’ll want to make this irresistible quick bread recipe when you read the headnote.

Sharon begins with, “If you’re a fan of all things red velvet…” then she talks about her choice of the chocolate for this recipe as well as why she chose dairy-free cream cheese icing instead of a heavier cream cheese frosting, and why you may not want to skip the icing for this recipe.

It’s just one example of what you’ll find that draws you into being excited to peruse all the recipes in every chapter.

The Chapters:

There are quick breads for every occasion – from breakfast and lunchbox treats, brunches and holidays, to parties and potlucks.

    • Monkey Business – Simply Delicious Banana Breads
    • I Dream in Chocolate – Easy Quick Breads to curb Your Craving
    • I Can’t Believe it’s not Cake – Breads Inspired by Classic Cake Flavors
    • Easy-Peasy, Lemon – Fresh Citrus Breads
    • Chock Full O’ awesome – Simple Fruit and Nut Breads
    • Baking for all Seasons – Easy Holiday Breads and Breads with Seasonal Produce
    • Fuss-Free Specialty Breads – Loaves with a Twist
    • Quick Bread Transformation – Using quick breads in other recipes such as bread pudding, French toast, and stuffed French toast
    • I’m Bringing Baking Back (To Gluten-Free Kitchens) – This is where you’ll get Sharon’s gluten-free flour blend, a recipe for her homemade pan release, homemade pumpkin pie spice mix, and chai spice mix
    • Quick Breads 101 – Information and tips to maximize your baking.

Our #GfreeReview of The Gluten-Free Quick Breads Cookbook:
75 Easy Homemade Loaves in Half the Time

You’ll find that all the recipes are easy to understand, they won’t overwhelm you, and most of the ingredients used in them you’ll probably already have on hand. But, most importantly, they are super delicious! No one would ever guess that these quick breads don’t contain wheat, dairy, or yeast.

The first things we've made from the book.

In the first few days of trying the bread recipes, I made Lemon Blueberry Bread and Mama’s Apple Cinnamon Bread. After baking both, dear hubby and I were ready to try even more! Each bread we’ve baked was not dry, not crumbly, and there was no grainy texture. Each one is just a fantastic loaf of delicious quick bread!

Our favorite points about the book.

Some of my favorite points are the headnotes and how easy it is to relate to each recipe. You’ll laugh at Sharon’s humor. And you will love the helpful recipe notes and tips for troubleshooting, storage, refrigeration, and freezing. In addition, she’s got some great ideas for substitutions and mix-ins, and even why to consider certain ingredients if you’re thinking about making a recipe.

Here's why you'll want to read and bake from the book.

The cookbook is fun to read as you decide just what to bake. And Sharon’s writing style makes you feel like you’re reading the personal notes jotted from a treasured family recipe.

As you work your way through every section, these notes give you the confidence to bake it successfully, along with noted minor tweaks for making it according to your taste.

Sharon’s photography illustrates the beautifully baked quick loaves of bread exquisitely. They give you lots of eye candy for looking at, and my only criticism, if I were to have one, is that it’s hard to choose just what recipe to bake first.

You won’t want to wait to get started baking these fast, delicious gluten-and-dairy-free loaves!

You'll want to read this book if...

So, here’s the thing, whether you’re new to gluten-free baking, experienced at doing it, or just looking for new delicious bread options, I think you’ll find that this cookbook is a fantastic investment.  It’s perfect for anyone who wants to make their meals more allergy-friendly, a whole lot more flavorful, and a lot healthier without the effort!

Hi, I'm Kymberley, the creator of GfreeDeliciously and the Amazing, Glorious Journey Programs. I pray that my work will inspire you to honor your body through God and Good Food from the inside out, all while enjoying your Amazing, Glorious Journey!

Take a peek at the behind GfreeDeliciously

Being creative, cooking, fresh veggies, the violin, decorating for holidays, sewing, hand-quilting, cowgirl boots, country music, fresh herbs in pots, blowing dandelions to the wind, walking barefoot in the grass, hanging out with eclectic interesting people, reading, writing, warm lazy summer days, and yoga!

Gluten, cilantro, mixed vegetables (the frozen kind I grew up with), negativism, rudeness, narcissism, overstaying a welcome,
not helping out, liars, promiscuity, cockiness, know-it-alls, being overly-dramatic, goal-less-ness, poor hygiene, chauvinism, lacking a sense of humor, excessive competitiveness, Laziness, horrifying spellers, people-bashing, criticism and mockery of others and their beliefs, flakiness (because flaky people are really unappealing), more swagger than substance, people who constantly manage others (those folks who think they have all the answers…)

Lambrusco, my iPad, popcorn suppers, dark chocolate, cookbooks, Almond-Rocca, historical romances, sun-bathing, weekend coffee with a good book in bed, PBS cooking shows, romantic comedies, cozy sweaters, fuzzy socks, and fragrant bubble baths with soft music and wine…

Say please and thank you, LAUGH, Pray often, ENCOURAGE others, Be KIND, HONEST, HAPPY, Keep your PROMISES, Be GRATEFUL, Wash your hands, FORGIVE yourself and others, LISTEN, Have FAITH, Be CONFIDENT, Honor your parents, CHERISH your children and grandchildren, TREASURE your family, ABIDE in GOD’s love, Be POLITE, Guard your HEART, SEEK your purpose, FEED your mind, body and soul, Be HOPEFUL, Resist temptation, Lay your burdens down, TRUST your gut, CONNECT with nature, Know that GOD made you perfect just the way you are, SERVE others, LIVE to love, Be COURAGEOUS, Shine bright, OPEN your mind, RESPECT differences, HONOR your inner hunger, SING loud, Be PROUD of who you are, Practice PATIENCE, Never give up, WEATHER the storms of life, Say I love you, LOVE one another

Meet Kymberley [Upson] Pekrul

A professional writer and self-taught Gfree lifestyle expert on [most] gluten-free things, I’ve always loved cooking and creating delicious foods from scratch for myself and those I love.

My journey began when everything I thought I knew about cooking and eating suddenly changed one day when I discovered I was celiac. So, I re-learned how to eat, cook, and navigate through life gluten-free – trusting God and His plan for me.

I live in what’s known as the Holylands of Central Wisconsin. All the recipes you’ll find here are gluten-free and inspired by the people and places I love most. Whenever possible, I cook with seasonal ingredients using whole foods – Making dishes suitable for everyday life and all food lovers gathered at the same table.

Gfree cooking, health, and wellness ARE my life. And this little corner of the internet is where I share what I’ve learned – Where my passion IS to nourish everyday GfreeDeliciously!
