Hello friend 

Sometimes I get a craving for a tasty steak made on the grill. After all, it is officially grilling season again.

But at our house, steaks are among the types of beef reserved for occasional Sunday dinners and special occasions like Mother’s Day and Father’s Day, which has got me into the preplanning mode for those upcoming holidays.

In other words, what I’m trying to say is that steak is not an everyday occurrence around our house. It has never been. And because of the cost, especially in these times with prices increasing, a good steak dinner is something you really don’t want to mess up.

One of our most popular posts on GfreeDeliciously.com is our Chocolate & Coffee Rubbed New York Strip Steak with Bourbon Parmesan Cream Sauce. It’s a fancy dinner where you can cook the steak using a grill pan or outdoor grill and have it on a plate in 15-20 minutes. This elegant tasting steak dinner idea is the perfect entrée meant to impress the next time you’re looking to make dinner special.

But sometimes, you just want more of a simple grilled steak. A hearty, rustic, juicy, and tender grilled steak that is the centerpiece of a meat and potatoes sort of meal. This is where our new recipe for Florentine Balsamic and Rosemary Marinade for Grilled Steak comes in.

This is our secret-weapon steak marinade recipe to make your next grilled steak dinner extra tasty!

Serves 1-2 | This Florentine Balsamic and Rosemary Marinade is the perfect savory complement for your next steak dinner. Made with fresh rosemary, balsamic vinegar, a little lemon zest, and the best extra virgin olive oil you can afford, the lightness of this marinade brings out the natural flavor of a juicy steak. To serve, slice the steak across the grain to divide among plates or plate up the entire generous portion to devour the whole luscious serving yourself!

Ingredients

1 1-1/4 to 1-1/2-inch-thick Ribeye Steak, Porterhouse, T-bone, or New York Strip Steak, trimmed (about 12 ounces)

1/4 cup extra virgin Olive Oil

2 tablespoons Balsamic Vinegar

2 tablespoons fresh Rosemary, chopped

1 tablespoon Lemon Zest

1 teaspoon Kosher Salt

1 teaspoon coarse ground Black Pepper

Instructions

1. Combine the olive oil, balsamic, rosemary, and lemon zest in a heavy plastic zipper bag. Zip the bag closed and shake to combine. Open the bag to add the steak, re-seal, and refrigerate for 5-8 hours (or overnight), turning the bag several times.

2. About 20 minutes before grilling, remove the steak from the refrigerator, and let it sit in the bag to warm to room temperature. Meanwhile, preheat the grill to high heat.

3. To cook, remove the steak from the marinade and season with salt and pepper on both sides. Place the steaks on the grill over moderately high heat until golden brown and slightly charred, 3 to 5 minutes per side for medium-rare (divide the time accordingly when using the flip and turn method to achieve perfect grill marks). For a medium-rare steak, the internal temperature should register about 5-degrees less than your desired doneness temperature or 130° using an instant-read thermometer. [1] Don’t worry; the meat will continue to cook when tented in the final step.

4. Transfer the steak to a rimmed cutting board or plate, tent loosely with foil, and let rest 5-10 minutes before serving.

[1] Grill 3 to 5 minutes for medium-rare (an internal temperature of 135° degrees F), 5 to 7 minutes for medium (140° degrees F), or 8 to 10 minutes for medium-well (150° degrees F).
