Tonight’s Dinner…

Plate servings individually or transfer all of the salad to a large bowl for family-style or potluck serving. Garnish with lemon slices, a lemon wedge, or sliced scallions on top.
Tonight’s dinner is Lemon Fusilli Salad with Shrimp. Make it ahead. Refrigerate until ready to serve or immediately garnished with a lemon wedge or sliced scallions.

It’s only Tuesday, and I’m already thinking about this next weekend. That’s because two of our favorite people will be visiting on Saturday, so I’m flipping through many recipes to decide what I want to make while they’re here.

Because the weekend is supposed to be a scorcher, the food has got to be super easy. That’s for two reasons. The first is selfish. I want plenty of time to visit with our guests. And the second reason is that I want to be outside with everyone enjoying the activities and not being stuck in the kitchen. It is all about ME, you know. LOL!!

So you guessed it, I’m thinking food on the grill.

In the meantime, since today is already becoming too hot for cooking, I think dinner tonight calls for an easy, creamy pasta salad. So we’ll be filling up on one of my favorites, Lemon Fusilli Salad with Shrimp. However, it can be made with ham if you don’t like shrimp. Either way, it’s delicious!

Being creative, cooking, fresh veggies, the violin, decorating for holidays, sewing, hand-quilting, cowgirl boots, country music, fresh herbs in pots, blowing dandelions to the wind, walking barefoot in the grass, hanging out with eclectic interesting people, reading, writing, warm lazy summer days, and yoga!

Gluten, cilantro, mixed vegetables (the frozen kind I grew up with), negativism, rudeness, narcissism, overstaying a welcome,
