Something to Cook…
Hello GfreeDeliciously friend
Many people may think of cooler weather when it comes to casseroles, and this casserole recipe is undoubtedly suited for making during those times too. Still, cold weather aside, this dish has become one of our favorites as a summer side dish, making it for cookouts, hearty family dinners, and just about any other occasion where we’re feeding a crowd. Another major plus is that it requires just a few minutes of prep time and only a handful of ingredients.
We were first introduced to this tasty casserole at a summer potluck with friends outside Nashville. With one bite, our family (kids included) immediately fell in love with the creamy, delicious combination of ingredients that meld together when baked. Loaded with tender summer squash, the béchamel sauce with creamy corn, crackers, and a buttery taste, it’s an authentic Southern comfort food knock-it-out-of-the-ballpark recipe that will win a homerun with everyone at your table!

Last week I promised you new recipes; I’d hoped to get them to you before the weekend, but things have been non-stop around here for over the last ten days – and very little here at my desk.
There’s so much to share. But first is the new recipe I’ve mentioned above in this email because, after all, we’re swimming in zucchini and summer squash now, so I’m trying to fix all I can with it, from dinner side dishes to desserts.
Then there is this craving I’ve got for a great salmon dinner!
Just in time, this popped into my inbox, so I’ve got to share it. Wild Alaskan Salmon is on Sale at Vital Choice!
The sale is good through 9/6/2022, so I’ll be placing my order soon since we’ve missed the gifts of Great Lakes salmon this year from family (who typically share their catches – but it hasn’t worked out for this year’s summertime visits from them – hint, hint, we still have beds waiting for you:) if gas prices drop and things open up in the schedule!
Does it sound like I’m begging? Not really. Everything seems out of wack when things don’t work out like we wish for… so maybe next year. In the meantime, thank heaven there’s Vital Choice.

I am hoping that this week and the weekend will treat you well. Next week is a full schedule around here, so I’ll take a little break from any new posts to visit with my mom, who’s visiting from Florida through the end of the month. We hope to catch up, do some fabric shopping, and enjoy the last days of summer kicking back.
Thank you for reading GfreeDeliciously’s Playing with Food.
