They pack protein, fiber, and healthy fats into a bite-size snack that’ll fuel your day no matter where it takes you.

No-bake and made with healthy ingredients, you can whip up a batch lickety-split. Best of all these tiny bites can be refrigerated in an airtight container and enjoyed for up to seven days. Freeze them, and you can pull one or two bites out whenever you need them for up to three months.

A nutrient-rich food made with wholesome ingredients, energy bites can be the perfect answer to your needing a mid-meal snack to keep you going. Providing protein and healthy fats, eating them can be great for keeping you satisfied throughout the day while giving you a boost of energy without a sugar crash. But beware that as with all great snacks, they should be enjoyed in moderation. One or two bites should usually do, as the calories from the ingredients can quickly add up.

Ingredients

  • 1 cup gluten-free Old-Fashioned Rolled Oats Not instant
  • 1/3 Cup Slivered Almonds
  • 1/3 Cup unsweetened shredded Coconut
  • 1 Tablespoon ground Flaxseed
  • 1/2 cup Almond Butter
  • 1/4 cup Honey
  • 1 Tablespoon Chia Seeds
  • 1/3 Cup Wild Dried Blueberries
  • 1 Tablespoon Coconut Oil used on hands to form/roll the bites

Instructions

  1. Combine oatmeal, almonds, and coconut in a bowl, stir to combine, then spread on a cookie sheet. Place in preheated oven, stir after five minutes, and continue baking for 8-10 minutes or until the mixture begins to toast and lightly brown.
  2. Remove from oven and allow the mixture to cool.
  3. In a medium bowl, microwave the almond butter for 20-30 seconds on high heat until it turns runny.
  4. Add in the honey, ground flax seed, chia seeds, blueberries, and baked mix into the bowl, stirring to mix.
  5. Use a spoon or small cookie scoop to measure the mixture for each bite. Form the bites into a ball by using a small amount of coconut oil on the palms your hands to roll.
  6. Refrigerate in an airtight container for up to one week or freeze for up to three months.

  5. Refrigerate in an airtight container for up to one week or freeze for up to three months.
