Like sunshine for your salad, Lemon Poppyseed Dressing takes five minutes to whip up, to wake up fruits and salads with a fresh zing of amazing lemon flavor!

Made with freshly squeezed lemon juice, the best extra virgin olive oil you can find, spicy Dijon mustard, just a little sugar, a bit of sweet onion, and of course poppy seeds. If you’re like me, you’ll find plenty of ways to use this vinaigrette. It’s a healthy dressing option for fruits, salads, and vegetables, over pasta, quinoa, or wild rice, and one of my go-to favorite homemade dressings for whenever I want to drop a few pounds.

Ingredients

  • 2/3 Cup extra virgin Olive Oil
  • 1/3 Cup fresh squeezed Lemon Juice
  • 1 Tablespoon sweet Onion finely minced
  • 2 Tablespoons Granulated Sugar
  • 2 teaspoons Dijon Mustard
  • 1/2 teaspoon grated Lemon Peel
  • 1/2 teaspoon Poppy Seeds
  • 1/2 teaspoon Summer Savory dried
  • 1/8 teaspoon Salt (or season to taste)
  • 1/8 teaspoon Pepper (or season to taste)

Instructions

  • Add all ingredients into a bowl, whisk to incorporate. Season with salt and pepper if desired.
