One of the traditions that many who live in the upper Midwest regularly enjoy are Friday Night Fish Frys.

For anyone who doesn’t know what the Friday Night Fish Fry is all about, it’s a decades-old supper club tradition that’s filled with old-fashioned hospitality, slow-paced dining, and food cooked from scratch served at family-run restaurants called Supper Clubs.

We Wisconsinites love the “Supper Club Experience” complete with regional specialties that include foods like fried pickles in the northern part of the state to Shrimp de Jonghe in the south. With meal accompaniments like funeral slaw, fry bread, and complimentary relish trays it doesn’t get much better for Wisconsin locals and visitors to our state. Warm up the dining with a Brandy Old-Fashioned Sweet or Sour (maybe a few), and you’ve got a hugely popular dinner experience that lasts an entire evening.

The Friday Night Fish Fry is enjoyed especially during the lenten season in  WISCONSIN’S HOLYLAND and other areas across the state. If you’re planning to try the “Supper Club Experience,”  you’ll want to arrive  plenty early to avoid the long wait.

After being diagnosed with celiac disease, I initially thought my fish fry Fridays were forever over. That was until developing my gluten-free versions of a fish fry batter and coating that I could make at home.

This mildly spicy coating is just one of our favorites and is great for pan-frying or oven baking your fish, coating vegetables, or even for making homemade deep-fried pickles.

Ingredients

  • 1/3 Cup gluten-free Corn Masa Flour instant
  • ¼ Cup gluten-free Plain Bread Crumbs Panko style
  • ½ teaspoon White Pepper
  • 1 teaspoon dried Lemon Peel
  • ¼ teaspoon Chipotle Chili Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Garlic Powder

Instructions

  • The recipe makes enough to coat up to six, 4 oz. Cod, Haddock or Panfish loins or filets
  • Combine all ingredients in a small zipper bag. Zip the bag closed and shake to combine.
  • This coating can be used as a dry seasoned coating directly on the fish and vegetables or used as a dredge after soaking the food in milk or batter. Either way, I’ve had luck with delicious results. 
    Use this recipe for coating in pan frying fish after dredging or place the fish on a baking sheet and then spray lightly with olive oil* before air baking to the desired doneness.

Notes

* I’ve found a kitchen gadget that’s simply great for spraying olive oil. It doesn’t use chemical propellants. It’s refillable and is BPA-free. The Misto non-aerosol oil sprayer/mister (found on Amazon) works great for spraying foods before air-frying, baking, grilling, roasting, spritzing vegetables or for dressing oil on salads before serving! I fill mine with roughly the amount of extra virgin olive oil I’ll need for my recipe. After each use just rinse the spray nozzle with hot water, and it’s ready for the next use. It’s also easy to clean after a few uses with hot water and liquid dish detergent.
